It depends on how far you want to go. There are reversible bolt-on conversions out there.
New bumpers, longhood with converted latch, blinker "extender" bits, maybe new mirrors, remove the side sills. All done.

I just went through the entire thread ...great job, but that's still lots of work, particularly fibreglass modification! Once done, though, I see your point that going back to orig seems easy peasy. Well executed, sir!

That isn't mine, but after going through that thread, it really got me thinking about it. Fiberglass modification is not something I have any interest in, but getting a pro to fit them professionally and paint them is probably a couple grand.

I've seen a few (very few). Like any backdate, they can look really bad or really good. The best ones I've seen are built more as "road cars", i.e. with full "bling" like rocker and bumper trim. It certainly would be unique considering how few are around!

I am planning to do a conversion on one of my impact bumper cars.
I like playing with my cars.
I invest in real assets and do not worry about how much my cars would gain value, or how bad I would depreciate them if I change things on them.

It depends on many variables, quality of execution, quality of vehicle you're starting with....
I wouldn't backdate a pristine mid year car. However I have seen a few quality backdates (tired mid year starting point) sell recently for quite a bit more than one could hope to get for a clean mid year car.
IMO, do what makes you happy, drive the car you want.
