WHAT is MORE IMPORTANT OIL PRESSURE OR OIL TEMP?
WHAT is MORE IMPORTANT OIL PRESSURE OR OIL TEMP or i am comparing apples and oranges?? What i am trying to do it not to ruin a bearing or damage anything due to oil. I am putting on a 951 S oil cooler along with the current oil cooler.

I think it is a little apple/orange, lack of pressure will do almost immediate damage as you know, I've been told to add an extra 1/2 qt. to these cars for the bearing issues.

Yeah that i do. The thing is now iam going to be doing some DE's and i dont want to run into trouble with something that can easily be mont. and prevented. i would put both however i only have space for one more gauge.

Since the factory provided you with an oil pressure gauge, I would say that the Porsche engineers feel that oil pressure is more important and I would agree. So if you are looking to add a gauge, I say add the oil temp gauge.
You can kind of tell that your oil temps are high from the pressure gauge, as the oil pressure will drop when the oil temps get high. But this is not the best method to determine if the oil is too hot and breaking down. Typically oil temps that exceed 210-220 degrees, will cause the oil to break down.

This is what I will be putting in the M3 since I only want one gauge but would like to know both Oil Temp/Oil Press:
