I'd estimate a decent starting setup to run $4-5k if you're starting from scratch and need a new computer.
$2000 will be the ballpark for a good enough computer, less if you can build it yourself or upgrade. You'll want to run an nvidia 970 or higher graphics card, and the nicer the better.
$500+ to get a good wheel/pedal set, you can go a bit less or spend far more.
$200-1000 for a steering wheel/pedal mount (optionally a dedicated chair)
$300-600 for the software assuming you want iRacing with a slew of tracks and cars. AC is cheap by comparison and has some advantages so pick that up too.
$600 for either VR or triple screens.
-Three screens give about 6 megapixels of resolution.
-The VR is only about 1 megapixel of resolution (due to overlap between the two eyes) but it's in 3D with head tracking. Field of view is sort of limited but not really since you can just turn your head.
Personally I find VR much more immersive. At first play you might get motion sickness, and the default iRacing settings have to be tweaked as right now the defaults will prevent/limit certain head motions while allowing others so your brain gets mixed up and it just about ensures you will get sick if you leave it that way. Google will fix you right up though.

Hah just looked it up - VR is great for some guys I can't adjust to it.
Bronson CXC new runs 50 - 60k not sure what others run but strongly suggest some seat vertigo is very common. The advantage with CXC they monitor and update these things are a lot like a race car they require an expert to keep them running.
Anyway look on e-bay many guys buy them and never use them.

Nice cockpit Gary; do you only race open wheelers? Curious if you feel 'off' in you ever hop into GT cars.

Assetto Corsa > Project Cars. Also for those who aren't into gaming I would suggest setting up your sim experiences on PC. The 3rd party mods for games like Assetto Corsa and Project Cars alone makes it worth it. Plus the experience can be as nice as you want it to be vs being limited to a single monitor and less wheel support on traditional gaming consoles. Also save yourself the trouble and get a wheel setup from Fanatec. Some of the best wheels out there. If anyone has any questions about this feel free to ask. I have built some seriously high end gaming PCs and I enjoy answering questions on this kind of stuff. Also feel free to check out some random Vid capped racing I have done in both Assetto Corsa and Project Cars. All in 2160p60fps and 1440p60fps for your viewing pleasure!
