I may be confused with the terms of the process, but I placed an "order" for the car but have the opportunity to make changes until something they call the "fix date."
True that. I just assumed (we all know what happens when you assume...) that since it's been nearly a month, you were locked-in. Once your car is assigned to an allotment, customer orders get priority. I think my order was frozen a couple of weeks after I placed the order. It was two or three weeks ahead of schedule.
To answer your questions: I've had cars with and without the embossed crest, and I don't miss it at all when it's not there. Save your money.
As for the interior, that's a personal choice. I have the two-toned agate gray/pebble gray and I love it, and get many compliments on it.
