I'm looking at the video and at times, the car drives at the same rate of speed but I hear changing revs and shifts, multiple times.
Maybe I just don't understand the story line behind it.

Capturing the sound while driving in every shot was not very effective as the camera was on a rig behind another car. This captured road and ambient noises. The videographer/editor used sound captured during filming at different times and spliced them in some spots. The video is for entertainment purposes mainly, so I am not sweating it
