I am planning on installing a PCCM radio. Currently my car has a prior owner installed Alpine headunit with a Hertz amp installed under the passenger seat. This is a non-HiFi car.

Looking at the connections on the back of my headunit, the amp is connected via RCA cables.

Is there an adapter for RCA cables like this one with the 6 pin yellow connector? https://www.suncoastparts.com/produc...BLAUPUNKT.html

I am a DIYer through and through, so I would rather not take it to an audio installation shop.

The cable you found looks to be the "solution".
I was thinking about changing out the Alpine head unit with amps fed by RCA cables in my car, and had found this Pelican Parts discussion on the same topic.
