How are you able to do this? Via an FM adapter?

Yes, hardwired FM modulator. Our moderator had posted a DIY a while back IIRC. A search should turn it up.

I actually use 2 one for iPod and one for Sirius wired in serial on the antenna line and each switched.

Does the FM modulator work in the NYC area ? What is the sound quality like, and is there a lot of interference from radio stations ?
I can't get iTrip to work around NYC due to the amount of radio stations that jam all airwaves

You must not confuse an FM Modulator and and FM Transmitter (like iTrip). There is no problem anywhere because it provides an injected signal more powerfull than any off air signal. Works in Philly and New York very well.

An FM Modulator is wired into the antenna line.

I'm assuming that mudman2 put the 'cables and crap' under the dash
Yes, FM may 'blow', at least from a SNR/DNR/THD+N perspective compared to line level analog (or digital audio via S/PDIF or D2B or MOST), but I'm afraid that unless Denisonusa pulls a rabbit out of their (fill in the blank), you have few choices short of full infotainment device replacement.
