CHT sensor? not dure if it's the same on a 3.6, but identical description you've given is classic symptom for Cyliner Head Temp Sensor failure for a 3.2.....

Did you locate source of problem?

I saw Renegade's Subi conversion at Ventura GAF. Vey interesting conversion! Subi motor with radiator was 40lbs lighter than original Porsche 2.0 motor! With almost 200 more hp!! Looks like fun!
