I do not have that particular brand add-on for carplay, but on my 2016 Cayenne S, I press the "INFO" button for 2-3 seconds, then the option appears.

I installed a 12volt "beeeeeeep" buzzer on my 987.1S!
I pulled the wires that operate the lock for the fuel filler door and tapped into it. It is a little of a hassle to get to the wires though....

Don't dismiss the obvious, could be a loose exhaust header bolt. They should be retorqued after a few heat cycles.

I added CarPlay to my '16 S in the way of a separate circuitboard installed in the radio. The instructions indicate that to activate it, push and hold for 3 to 5 seconds the "INFO" button.
